Sun Hing Lung opened on Henry Street in 1985, in a storefront so narrow that two customers standing shoulder-to shoulder is a crowd. The recipe was simple then and it's simple now: rice flour, water, a flat cloth, and a scraper.
Kenny took over the cloth in the early 2000s. He still pours every batch of batter by hand, watches the steam, and decides — by feel, not by timer — when each roll is ready. That's the whole craft. There's no secret. There's just doing it the same way, ten thousand times.
We don't take cards. We don't deliver. We close at 4:30 because by then the morning's batter is gone and that's that. What we do is make the freshest, cheapest, most honest rice roll in Chinatown — and we've been doing it long enough that the kids who grew up on it are now bringing their own kids.

We've been pouring the same rolls for forty years. The cloth is hot before you finish ordering. Faster than a cart, fresher than a kitchen.
A plain roll is $2.50. A shrimp roll is $4.50. Hot soy milk is $1.75. Two people eat well for under fifteen dollars. Cash only — that's how we keep it cheap.
No rebrand, no delivery app, no QR-code menu. Kenny still pours the batter by hand. The aunties still eat standing up. Some things don't need fixing.
